Chicken Inasal: The Philippines’ Mouth-Watering Grilled Chicken Recipe with a Citrusy Twist

Grilled chicken marinated in a mixture of vinegar, calamansi, garlic, and annatto oil.

Ingredients:

  • 2 pounds bone-in chicken thighs
  • 1/2 cup coconut vinegar
  • 1/4 cup lemon juice
  • 1/4 cup lime juice
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 6 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions:

  1. In a bowl, combine coconut vinegar, lemon juice, lime juice, soy sauce, brown sugar, garlic, ginger, turmeric, salt, and black pepper. Whisk to combine.
  2. Put the chicken thighs in a large resealable bag and pour in the marinade. Seal the bag and shake to ensure the chicken is coated evenly. Marinate in the refrigerator for at least 1 hour or overnight.
  3. Preheat your grill to medium-high heat. Brush the grates with oil to prevent sticking.
  4. Remove the chicken from the marinade and discard the excess marinade.
  5. Place the chicken on the grill and cook for 6-7 minutes per side, or until the chicken is cooked through and has a nice char.
  6. Remove the chicken from the grill and let it rest for 5 minutes before serving. Enjoy your Chicken Inasal!
