Pancit: The Quintessential Filipino Noodle Dish with a Perfect Medley of Flavors

A stir-fried noodle dish typically made with thin rice noodles, vegetables, and meat or seafood.

Ingredients:

  • 1 pound pancit bihon noodles
  • 1/2 pound pork shoulder, sliced into thin pieces
  • 1/2 pound chicken breast, sliced into thin pieces
  • 1/2 cup vegetable oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 carrot, julienned
  • 1/2 head cabbage, shredded
  • 2 cups bean sprouts
  • 1/2 cup green onions, sliced
  • 1 lemon or lime, sliced into wedges

Instructions:

  1. Soak pancit bihon noodles in warm water for 20 minutes or until soft. Drain and set aside.
  2. Heat oil in a large wok or skillet over medium-high heat.
  3. Add sliced pork and chicken and stir-fry until browned. Remove from wok and set aside.
  4. In the same wok, sauté onions and garlic until softened.
  5. Add chicken broth, soy sauce, oyster sauce, black pepper, and salt. Bring to a boil.
  6. Add carrots and cabbage and cook for 2-3 minutes or until slightly softened.
  7. Add bean sprouts and stir-fry for 1-2 minutes.
  8. Add cooked pork and chicken, green onions, and soaked pancit bihon noodles.
  9. Stir-fry everything together for 3-4 minutes or until noodles are cooked.
  10. Serve hot with lemon or lime wedges on the side. Enjoy!
