Sinigang: A Hearty and Tangy Tamarind Soup that Will Warm Your Soul

A sour and savory soup made with tamarind, vegetables, and meat or seafood.

Ingredients:

  • 1 lb pork belly, cut into bite-sized pieces
  • 1 onion, quartered
  • 2 tomatoes, quartered
  • 1 thumb-sized ginger, peeled and sliced
  • 8 cups water
  • 2-3 cups tamarind (sampalok) leaves, cleaned and shredded
  • 2-3 cups vegetables of your choice (e.g. okra, eggplant, string beans, radish), sliced
  • 1-2 green chilies (siling pangsigang), sliced
  • 1-2 tbsp fish sauce (patis)
  • salt and pepper to taste

Instructions:

  1. In a large pot, bring the pork, onion, tomatoes, ginger, and water to a boil. Skim off any scum that rises to the surface.
  2. Lower the heat and let it simmer until the pork is tender, about 40-60 minutes.
  3. Add the tamarind leaves and let it simmer for 10-15 minutes until the broth is sour. Remove the tamarind leaves and discard.
  4. Add the vegetables and green chilies and let it simmer for 10-15 minutes or until the vegetables are cooked.
  5. Season with fish sauce, salt, and pepper to taste.
  6. Serve hot with steamed rice. Enjoy!
