Sisig: A Sizzling and Spicy Filipino Dish with Chopped Pork and Liver

A sizzling dish made with chopped pig’s head and liver, seasoned with calamansi and chili peppers.

Ingredients:

  • 1 lb pork belly, boiled and grilled or broiled until crispy, then chopped into small pieces
  • 1/2 cup chicken liver, boiled and chopped
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 red chili peppers, chopped
  • 2 green chili peppers, chopped
  • 1/4 cup soy sauce
  • 2 tablespoons vinegar
  • 1 tablespoon sugar
  • 1 tablespoon mayonnaise
  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions:

  1. Boil the pork belly and chicken liver until cooked. Grill or broil the pork belly until crispy. Chop both the pork belly and chicken liver into small pieces.
  2. In a pan, melt the butter over medium heat. Add the onions and garlic and sauté until the onions are translucent.
  3. Add the chopped pork belly, chicken liver, and chili peppers. Mix well.
  4. Add the soy sauce, vinegar, and sugar. Mix well and continue to cook for 5 minutes.
  5. Season with salt and pepper to taste.
  6. Add the mayonnaise and mix well.
  7. Serve hot with rice.
